Following a long and acclaimed run as executive chef at Harvard Square’s much-lauded Harvest, chef/owner Mary Dumont now brings us Cultivar (1 Court St., 617-979-8203, cultivarboston.com), her new eatery at the historic Ames Hotel in downtown Boston. A seasonal, sustainable menu is driven by herbs and veggies from the restaurant’s on-site hydroponic garden, the best local produce available and foraged ingredients. Meat and seafood get their due as well, with items like razor clam crudo, coal-grilled swordfish belly and the dry-aged rib eye for two looking like early menu highlights.
